Monkfish, raw and cooked asparagus, wasabi, ponzu and kumquat juice reduction

Cacio e pepe (cheese and pepper) tortello pasta, broad beans, black truffle and crispy guanciale

Locally sourced lamb: braised with cardamom on carrot puree, seared small loin with tarragon and crispy sweetbreads  

“Half soft-boiled egg”: chocolate, chamomile, violets and Timut pepper
